Superyacht Warewashing Guide: Dishwashers, Glasswashers and Water Treatment

Why Warewashing Matters More Than It Gets Credit For

Warewashing is often the last item specified in a galley fit-out and the first to cause problems in operation. A dishwasher that cannot keep up with service throughput, a glasswasher that spots crystal, or a water treatment system that is not maintained forces the crew into manual alternatives that are slower, inconsistent and physically demanding during service.

Specify warewashing correctly at the outset and it disappears into the background of service. Specify it inadequately and it becomes the issue that dominates every post-charter debrief.

The Three Categories

Undercounter dishwasher — the standard specification for the main galley. Typical cycle time 2–3 minutes, cleaning 25–50 pieces per cycle. Winterhalter UC Series and Hobart Ecomax are the benchmark specifications. Water consumption per cycle (3–4 litres for a good machine) should be confirmed against the vessel's water production capacity.

Undercounter glasswasher — separate from the dishwasher, typically located in the bar pantry. Lower temperature (50–55°C) and lower pressure than a dishwasher — essential to avoid thermal shock to fine crystal. The Winterhalter UC-M is the most widely specified glasswasher in the superyacht sector.

Utensil washer — a larger machine for pots, pans, gastronorm trays and oven racks. Not required on all vessels; on larger vessels it significantly reduces manual pot washing labour during service.

Water Treatment

Limescale is the enemy of warewashing quality. Hard water leaves deposits on glassware (impossible to remove without acid), reduces chemical effectiveness and accelerates machine wear. The Winterhalter water treatment system — integrated with their warewashing range — is widely regarded as the most effective in the industry. It should be specified as standard with any Winterhalter machine and sized against the vessel's water hardness at primary ports of operation.

Chemical Management

All commercial dishwashers use automatic chemical dosing — detergent and rinse aid. Monitor chemical levels daily during charter; running out of rinse aid mid-service is an avoidable problem. Keep a minimum two-week supply of all warewashing chemicals aboard at all times.
